Look up, and you see the stars as they were before their light travelled this far to find you. Look into aged Pu'er, and it's the same quiet trick: what you taste is a leaf remembering a mountain, a season, a hand, all of it filtered through years of dark and stillness before it ever reached your cup.

Nothing here is what it first appears to be. That's the point.

Behind the nine

Nine more cakes sit behind these. Two are the oldest light in the cellar — pressed in 1967 and 1991, and long out of circulation. Neither is listed and neither ships. They are opened at the table, in person, or not at all.
